Ingredients : |

| 2 large bananas (barely ripe), lemon or lime juice, fat for deep frying, sugar. Batter: 2 oz flour, ¼ tsp baking powder, ¼ tsp salt, 1 egg, ¼ Pt milk |

| How to Prepare : |
|
To make batter:
Sieve flour, baking powder and salt into a bowl. Make a well in centre, break egg and add to flour. Add small quantity of milk and stir. Continue adding milk gradually, stirring all the time until all the milk is added and batter is smooth. Beat for about 5 minutes, cover and set aside.
To make fritters: Peel and slice bananas into ¼ inch pieces. Coat thoroughly with batter. Heat fat, and fry until golden brown. Drain and sprinkle with lemon juice. Toss in sugar and serve hot. |
